Pan fried with mushroom ragout.
My favorite thing to do is make it into small patties, brush it with olive oil, and bake it until it's crispy on the outside and almost chewy on the inside. I like it like that as a snack mostly. It's even good cold. Aside from that, I'll either bake it to a softer texture or saute with some onion, garlic, celery, etc. or just saute it plain. Then plain, I might have it with some tomato sauce, stewed tomatoes & other veggies, or maybe pesto, or beans & salsa, etc.
I love polenta with a fresh mushroom, basil and wine sauce. Served with a crisp salad. A perfect meal.
