smell of lamb is it always strong?!

Question: Smell of lamb is it always strong?
I'm cooking lamb filling for fatayers. I don't have any reason to think the lamb would be bad. I bought lamb shanks at the store and kept them frozen until today when I thawed them in ice water and ground the meat.

Except the lamb smells horrid! It doesn't smell like rotten meat but it is quite strong. Does this mean they are bad or does lamb always smell like this? I have made fatayers with my grandma before and don't remember this smell. But that was a while ago.

Answers:

Yes, lamb has a distinctive smell. Sounds like it was kept properly before you started working with it so there's no reason to think it has spoiled.

It smells very strong when it is older. I have had harira, a Moroccan tomato, lentil and lamb soup made with spring lamb and it tasted like tender cubes of beef. I've had mutton and could hardly stomach the smell or taste.

Most of the strong smell and the strong taste is in the membranes. If you do not care for the strength of the smell/taste, remove as much of the membrane as you can.
