Hmmmm... my mom always made this pork roast with:
the roast of course
ketchup
carrots/potatoes/onions
vinegar
seasonings and water...
and cook it in a slow cooker... yummmm!!!

cover it in garlic, onions, paprika, salt, pepper, dried rosemary, let it cook on 300 degrees for one hour depending on size.

Put a some oil in a frying pan enough to cover the bottom of the pan lets say about 1/2 cup and brown your roast on each side lets say about 5 mins per side pull out your roast and place it in a crock pot or roasting pan slice potatoes carrots celery and gralic cloves arange all of this into your pan now get your oil hot again put about 3 -4 heaping tablespoons of flour into your oil once it is hot let the flour brown a tad add 2 -3 cups of water whisking constantly no lumps I usually add one packet of brown gravy mix just because i like the color and flavor it gives pour over top of your roast and veggies now salt and pepper to tatse or if your family is like mine and enjoys things a bit spicer use a creole seasoning like tony's if you are doing the crockpot put it on the long cook cycle in the oven on 300 all day or about 6 hours if you want it falling apart if you want it slice able 350 3 1/2 - 4 hours

I use a beef chuck roast to make a delicious pot roast. Rinse and dry roast, then cut many slits on both sides. Use jarred minced garlic to stuff the slits. I go a little heavy handed on the garlic because I love it! Then in a dutch oven heat a Tbs. or two of Olive or Canola oil. Put the roast in and brown on both sides. Then add 2 cans Swanson Beef Broth and bring to a boil. After it comes to a boil, cover with a tight fitting lid, and turn heat down and slowly cook until the meat shreds apart. Check frequently to make sure the liquid level does not go down too much and cause the Roast to burn. Add water throughout cooking if necessary. When done, you can skim the fat off of the broth/drippings and use the broth to make a gravy for your roast and some mashed potatoes, or you can simply use the broth minus fat as is, kind of like an Aus Jus! Yum, comfort food at it's best!

You can use this recipe either with a crock pot or as a roast in a pre-heated {350} oven.
1 roast - 3- 5 lbs.
Carrots - one pound
potatoes - 4 large ones cut in quarters.
onions - 2 large cut in quarters
1/2 cup water
when you cook the roast in the oven you start with the 1/2 cup water, carrots and the roast for about 20 min. when the carrots give a some then add the potatoes for 15 min. then the onions for the rest of 1 1/2 hrs. Adjust according to your likes, add a little salt & pepper.
With the crock pot you add everything [in that order] except all the water, about 1/4 cup.

Pot Roast
Sear roast in large pan or pot over medium high heat in butter with a small amount Worcestershire sauce-add several cups liquid-stock,water or wine in any combination you please-enough to half cover roast. Cook in oven or on stovetop,covered, on medium heat or 300F for 1-2 hours, adding more liquid if needed. Add cut up potatoes, onions, celery, carrots, parsnips, peppers, etc.-whatever combo you like best. Continue cooking until veggies are done. Remove meat and veg to a platter, bring liquid to a strong simmer and add water mixed with flour, cornstarch, arrowroot, etc. to thicken. Serve meat and veg with gravy poured over.
The nice thing about this recipe is you can use cheaper, tougher roasts because the slow cooking in liquid tenderizes it. I have done it with beef and pork roasts.

I do a roasted brisket. It takes a while, about six hours at low low low heat. Using all kinds of veggies and canned tomatoes. The recipie can be found at the following::::: search for brisket recipie. I believe it is an Tyler Florence recipie. Try it, is is great!

Here's my version of Pot Roast. Simple and Delicious =0)

Simple Pot Roast

pot roast
potatoes-peeled and cut into chunks
baby carrots
canned whole green beans-optional
can of cream of mushroom
lipton onion soup envelope
soup can of water
place roast in roasting pan, place veggies around roast, mix soups and water and pour over roast and veggies. cook for about 1-2 hours, depending on size of roast. 400 degree oven. serve biscuits to sop up gravy... Can also cook this in a crock pot for 4-6 hours on low

Night before, sprinkle roast with quite a bit of salt and black pepper and place in a large bowl. Pour an entire 2 liter bottle of Coca Cola over it and place in refrigerate overnight. Next day, take out of Coke and place into crock pot and cover with beef broth (canned is fine). Cook on high for 3 hours, then turn on low for 3 hours but can go for up to 6 hours. It is perfect, very tender and juicy! This one is a guarantee.
