Honestly, it hasn't. Hallyu is mainly limited to entertainment, singers, movies, and TV shows. Korean food has long been popular in neighboring Japan and is fairly easy to find in neighboring China. In Western countries, Korean food is just one international cuisine competing against many others and isn't as popular as other Asian cuisines like Thai, Indian, or Japanese.
