Spain has a very varied national cuisine, and each autonomous community has its own specialty. Fried fish and gazpacho are associated with Andalusia, Paella with Valencia, and Cider and white bean stew with Asturias.
In Madrid, being the capital you can find food from all over Spain (and the world).
A dish which is especially associated with Madrid is "cocido madrile?o", madrid chickpea casserole.
Basically this is a stew made from chickpeas, and meat - normally, chorizo, morcilla (blood sausage), morcillo (skirt steak). It may also contain vegetables, onion, cabbage, carrot and tomato, turnip. Also a ham bone is usually for flavour.
A cocido is served in two courses. First the stock is served in a dish, with fideos (pasta) and maybe a splash of sherry. The second course, the chickpeas are served on a plate with the meat and veg.

Callos - is another dish asociared with Madrid. Its tripe. I've never tried it.
After a bullfight in "Las Ventas", Madrid's bullring, Rabo de Toro (Bull's tail) is served in many nearby restaurantes, and is exquisite. The meat is so soft and tender.
