Answers:
Whisky sauce: Mix whiskey, water, sweet chili sauce and sugar together in a pan. I don't tend to use quantities- I just do it to taste, but the general rule is 2 measures of whisky to 1 measure of water and a teaspoon of the sweet chili and sugar to taste. Mix all the ingredients together and once you are happy with the flavour add cornflour to thicken and heat it on a hob stirring continuously.

I warn you the whisky Will make the sauce taste 'rough' at first but once you cook of the alcohol, the flavour Will become smoother.

The ratio of whisky:water:sweet chili is very much a matter of personal taste, it is simply a matter of experimenting.

Its an idea that I nicked from a pub when we went out for dinner one day

if you want to put a little angst with your recipe...combine catsup, hot sauce and a little soda water then marinate it for 1 hour then grill it...your visitors will surely love it...

Jerk bbq sauce

Onion very finely diced
Garlic very finely diced
Mushroom very finely diced
Mushroom ketchup to taste
A little lemon juice
Mixed herbs - or just tarragon
A little wine - to give a little more fluid.
Ground black pepper.

Fry onion until soft but not coloured. Add the garlic and stir.
Then add mushrooms and in gradually add rest of ingredients until you have your sauce.

If you want a "cream of ....." sauce add cream, cremefraiche or Elmlea to the pan. To thicken use the cremefraiche. Serve over some boiled rice and the chicken and a big salad on the side.
