How to translate Pho menu items to english?!

Err.. you don't need a dictionary for that. Just find a place with a menu in vietnamese and English translation. Eat there often enough and you'll find a pattern eventually. Once you found the pattern, the menu really isn't that difficult to understand.
tai: Raw beef fillet. This is also called rare beef because the heat from the soup will cook the thinly sliced beef to rare or medium when they were brought to you.
chin: beef brisket
nam: beef flank
gan: beef tendon
sach: beef tripe
bo vien: beef meat balls
gau: fatty brisket
ve don: skirt flank/steak
Pho dac biet: Pho with everything listed above. Ve don might or might not be available depending on the location.
ga: chicken
ga luon: chicken (white meat)
ga dui: chicken (dark meat)
ga tay ho: chicken (both dark and white meat)
tom: shrimp
hai san: mixed seafood
chay: vegetables
I have ordered Pho tai, chin, nam, gan, gau, sach, and ve don once. As soon as I finished ordering, the waiter yelled: "WHY DON'T YOU JUST SAY PHO DAC BIET WITH NO BEEF BALLS!!!".

Pho is just pho. Trying to translate it will just cause confusion. "No, I don't want Vietnamese noodle soup with vermicelli - I want Pho!"
I think tai means (beef) steak. Beyond that I don't know.
The places near me all just say things like "pho with brisket and meat ball" etc.
Not that it matters, it seems I always end up with #35, no matter which restaurant I go to.

Are we talking about the Vietnamese Pho/noodles if so thats my favorite Asian food with the mystery beef meat balls and flank steak. I don't know what part of the cow the meat balls come from and I don't wanna know cuz it's so good
