WHAT TO COOK FOR AN AFROCENTRIC CUISINE EVENT?!


Question: WHAT TO COOK FOR AN AFROCENTRIC CUISINE EVENT?
IM PLANNING AN AFROCENTRIC (AFRICAN, CARIBBEAN, AFRICAN AMERICAN) CUISINE FEST AT MY COLLEGE.. WHAT ARE SOME DISHES FROM EACH OF THESE AFROCENTIC CULTURES THAT ARE CHEAP TO MAKE, EASY TO MAKE, AND APPEALING TO THOSE WITH AMERICAN TASTE?

Answers:

Jerk Chicken, (Cheap if you buy the cheapest cuts of thighs and de-bone/de-skin them to your liking)
*with a side of yellow ricewith diced green and red bell pepper&onions, and side of red beans- look up some authentic caribbean

Look up some African Soup. I know there is a recipe out there for chicken/peanut soup that is supposed to be real good,.......Cheap. I have had a few african stews in my day, FuFu and rice are common sides that accompany african soups. Search the net for sure on this one. I hope you have a huge pot!

A baked macaroni with a twist (like some crushed bacon in it) or Patty Labelles' over the rainbow mac and cheese. (I saw it on Oprah years ago, and have made a version of it at home) Cheese can be spendy, but not too bad.

Banana Pudding or a Peach Cobbler or both(dirt cheap)

Collards with diced onion, ginger, garlic, splash of vinegar, and smoked turkey legs (all of this is dirt cheap) with a side of corn bread. Some corn breads have bacon in them.

Grits, with a side of a bisquit and topped with a white sausage/peppered gravy. (Breakfast dish) CHEAP.



ALSO, WHATEVER YOU DO, DO NOT JUST FRY UP SOME CHICKEN. IT COULD BE INSULTING. THE FRIED CHICKEN THING IS NOT JUST A BLACK THING. IT IS A BIG SOUTHERN THING. AND SO IS BAR-B-QUE. DOWN HERE IT IS A FORM OF ART, AND A PASSION. NOT A COLOR. HOWEVER, BLACK FOLK CAN NOT RESIST IT AND FRY UP SOME OF THE BEST! IF YOU ARE TRYING TO IMPRESS FOLKS,
COOK SOMETHING THAT HAS A TRADITION TO IT, SOMETHING THAT WAS MADE FOR FAMILY GATHERINGS. AND SOMETHING THAT HAS BEEN AROUND FOR GENERATIONS.

gumbo (not very cheap though if it's home made)
shepherds pie
pigs feet (blah some people like them :()
cow's tongue?



Really anything Cajun /Creole would please everyone. Great flavors there.
Even white people like myself love them =)
