What are the main differences between the different Chinese cuisines?!


Question: What are the main differences between the different Chinese cuisines?
Eg. Cooking methods, techniques, ingredients, emphasis etc

Answers:

There are few differences in the cooking methods and techniques per se. However, there are vast differences in the use of ingredients or as you said emphasis. Examples: The region that serves Cantonese style cuisine infuses simple flavors, mild and lots of seafood. Where Hunan & Szchuan cooking is presented, lots of spicy chili peppers & peppercorns are a main ingredient in many of their dishes. Regions where Muslim culture has a broad influence you might find more lamb served on a menu than in other regions. For a more elaborate response, here is a link to a decent Wikipedia article.
