What is the difference between Hunan and Szechuan cuisines?!

Question: What is the difference between Hunan and Szechuan cuisines?
And how different to Cantonese cuisine?

Answers:

Hunan and Sichuan cuisine are similar where both use Sichuan peppercorns and dried chilies, but Hunan cuisine uses more pepper and is spicier.

Cantonese cuisine does not rely on chile peppers and is generally mild. Cantonese cooking does use fermented foods like soy sauce, oyster sauce, black beans and soy bean paste.
