its the fungus (healthy of course) that they make grow as the rind... they rub this special substance that makes the bacteria multiply faster, and produces that hard covering

Mould. But don't worry, it's safe & meant to be eaten.

it is made of milk first as the rest of the cheese but the bacteria then works to make it like it is
