what you need to do is - take all of the curry content out, there is nothing worse than over cooked or mushy curry, the sauce should be put into a ahallow frying pan add in a touch of oil and 1/4 finely chopped onion first this always prodices a base that thickens the sauce - brown the onions and add the sauce and leave to simmer on high heat it will thicken and then you can return it to the curyied contents.



I have to agree with "redmug"

If your curry is already cooked, take out the meat and cook on a very high heat, turning occasionally.

You will then boil the water away leaving your sauce a lot thicker.



Put it on a high heat and let the liquid evaporate. However if there is chicken in the curry this may overcook.



If you have corn starcb, you can mix a tablespoon in 1/4 cup cold water and slowly add that until it thickens.



simmer it for longer and some of the water will evaporate..

you could also try draining out some of the water.



boil the fluid off.
