If you are afraid that you will enter a restaurant in the US and unknowingly eat cat then relax, don't be so gullible. Chinese restaurants throughout the world cater for the national tastes wherever they are so you can find different preparations in Peru or South Africa unknown to you in the US. Actually in the States they even invented dishes like 'Chop Suey' that aren′t known in China.
Besides, they are regulated by the FDA.
gǒu ròu is dog meat. Also watch out for meatballs and soup in China. People put cat intestines, stomach, and meat from the thighs may be put in there.
