Part of the thickening comes from the sugar, you need a recipe that is specific for sugar-free jelly. Otherwise it won't turn out right.Pectin needs sugar in order to thicken,most recipes that call themselves sugar-free use a high sugar juice,like apple or grape juice to soak with the pectin.So it depends on how sugarfree you want to go. There are several recipes that use a sugarfree Jello base to make it with.That might be your best bet. cooks.com had some good recipes, You might try there.

It would taste a whole lot sweeter if u used splenda
