Their food is influenced by greeks, arabs and spanish as well
breakfast - Italian omelette - Frittata
Lunch or dinner - Spaghetti bolognese or with meatballs, Pasta alla norma
Dessert - Arancini or Granita
Sicilian food is awesome, but it is very rich and I don't think they always eat their typical dishes. However, I understand that you have a presentation to do and you want to put something typical in it.
You can write they drink coffee for breakfast, and I'm sure they do, and to spice up your project you can add they also eat a marzipan sweet or a cannolo and maybe an orange, a fruit whose production is very important for Sicilian economy.
Lunch: 1st Course: Pasta alla norma, 2nd Course: Capretto al forno
Dinner: Starter: panelle (fritters made of chickpea flour), 1st Course: Pasta con le sarde,2nd Course: Frittura di paranza
Of course Sicilians don't eat like this every day, or God would have provided them with stomaches made of iron ;-D . These are just examples of typical and delicious Sicilian dishes.
If you have the chance to travel to Italy, you will notice that we are more likely to speak of "regional cuisine" rather than Italian cuisine as it is meant in foreign countries. And the same recipe may vary a lot from one little town to another just 6 miles away.
Good luck with your project
I'm not Sicilian but still Italian!
