my fav is jerk snapper with festival omg i love those things especially fried bread fruit with my grandmas twist on fried chicken ........the best the seasonings she use makes the chicken fry a reddish orange color ooooohohohoh and stew peas w/rice cant forget my beefpatti with cocoa bread

INGREDIENTS :

1 1/2 cups flour
3 tablespoons cornmeal
1/2 teaspoon salt
3 tablespoons brown sugar
1/2 teaspoon vanilla
3/4 teaspoon baking powder
2/3 cup water

METHOD:

Sift the flour, baking powder,salt, and cornmeal and combine.
Add the sugar and stir.
Add the vanilla to the water, and then add the mixture to the dry ingredients,binding to form a soft dough.
Knead lightly.
Leave covered for about 1/2 an hour. divide the dough into eight portions.
Flour hands.
Knead lightly, then roll and pull each portion to form a 6 in x 1 1/2 in length, about 1/8 in thick.
Dip the festival in a mixture of cornmeal and flour then deep fry in hot oil until golden brown

INGREDIENTS :

Jerk Sauce - Buy Now or Make your own
3 Medium Snappers
Pimento (all spice) branches or aromatic wood

METHOD:

Rub the fish with the sauce.
Marinate for about 2 hours in the refridgerator.
Wrap the fish in foil
Grill at lowest possible setting over a low fire until done.
Pimento (all spice) branches (this is what is used in Jamaica) mixed with charcoal is best.
If not try to use an aromatic wood in the barbecue grill to enhance the flavor.
Chop meat into pieces, and serve traditionally with hard-dough bread

INGREDIENTS:

1-Cup Buttermilk
? cup Red Stripe Beer
8 Drumsticks
1 cup yellow Cornmeal
1 Cup all Purpose Flour
? cup cornstarch
? cup Dry Jerk Seasoning
1 Tablespoon Paprika
2 Tablespoon salt
2 tablespoons black pepper
Vegetable or Peanut Oil for frying

METHOD:

Combine the Red Stripe Beer and Cup Buttermilk in a large glass bowl.
Add Chicken to the bowl and marinate in the refrigerator for 2 hours.
Combine the flour, cornmeal, jerk seasoning, cornstarch, paprika, salt and pepper in a bowl. Mix to combine.
Drain the chicken and discard the marinade.
Toss the Chicken lightly one at a time to coat them. You can use a zip lock bag with the breading mixture to do this.
Place the breaded chicken on a large baking sheet lined with wax paper. Be sure they do not touch each other. Place in the refrigerator for 30 minutes.
Pour oil in 2-3 inch deep skillet. Heat oil to approx 355f (check with frying thermometer).
Add the chicken 2 at a time. Fry each for about 4 minutes on each side or until they are golden brown
Remove each piece of chicken and place on paper towel to drain oil. Transfer to an oven safe platter once oil is drained.
Place in an oven set at 200f to keep warm. Once all the chicken is cooked, it is best to serve immediately.

When I visited Jamaica, I tasted this amazing fudgy candy made with coconut & fresh ginger. Would love a recipe for that.

I looooove Jamaican cooking! I have tried a few times to do it myself. Thankfully there are many Jamaican ladies in the church and when we have social gathering it is a good move to get together with the Jamaicans. I particularly love Jerk Chicken. And their salt cod disshes are delicious too ..............!

Oh my gosh it's sooo good! I worked in a pharmacy with a Jamaican lady and she always brought her cooking to share w/us.

I can cook the basics of Caribbean food, "PR native"...rice, plantains, stewed beef or chicken.....! I go to the Islander which is owned by TRUE Jamaicans...and the food is GREAT...just like I was back on the island. Top choice is Jerk, then stewed beef.....red beans and rice with extra gravy and a good "ting" you know the Jamaican grapefruit soda....wow....I think I will stop there on my way home...you made me hungry. Everything is IRIE

There's a good cafe on Brixton Hill called Negril and it's so good and cheap too! Gets a big thumbs up from me
