It's a named coined by chefs running eating joint outside India to make believe that it's authentic Indian Dish.
I am a foody and private chef, stay in Bombay. I don't know any restaurant that serves Bombay Chicken here.
Bombay also doesn't have any specific cooking style. In the state of Maharashtra, where Bombay is located, Kolahpuri Cooking style is famous and you might see Chicken Kolapuri/Veg Kolapuri in the menu card.
Western coast has three distinct cooking styles......Mangalorian, Goan and Malvan...but no Bombay cooking style!
