I may have eaten under cooked meat, what may happen to me?!

When meat is butchered in the abattoir there is a chance that the outside of the cut of meat can be contaminated by gut contents. When you cook a steak, joint etc. bacteria on the outside is killed by heat. As the inside of the meat has not been exposed to contaminants there is no risk of infection and it can be served 'rare'. When the meat has been chopped, ground or minced to make sausages, burgers etc., flesh that was on the outside of the meat can be on the inside of the sausage. Hence bacteria will not be in direct contact with the heat and unless the sausage or burger is cooked right through, there is a chance that bacteria will still be alive. There are many well documented cases of E.coli O157 infections from undercooked burgers, sausages and meat products. This strain of E.coli can be fatal in the young and elderly. It is never a good idea to have undercooked meat products.

Probably nothing. You might feel lousy because it was too greasy or something else didn't sit right with you. The way pork is raised today leaves very little room for danger if it's undercooked.
