I suppose not only the food but you also feel many other things in Indian culture is Nasttyyyyy . It's simple because of your unfamiliarity with the of Indian culture.

Modern Indian Food is the result of culinary experiment of several hundred years and influenced by different culture and cooking style.

As a matter of fact, few thousand years back our ancestors used to make Steaks when they were in Jungle life. So the Steak culture needs to travel few thousand years of their gastronomic experience to understand and value Good Indian Food.

it depends on how the food is cooked. The food served at Indian Restaurants or in fact most of the houses is pathetic. Indian food is very healthy. Normally the food we have at home has salt, turmeric, cumin seeds , grated ginger and tomatoes in it. We don't use any spices. And our Daals have the tempering of cumin seeds, Hing and some ghee only. We do eat onions, Gralic and non-veg. But Onions and garlic is used occasionally. I personally feel any food that is cooked in an authentic traditional way is very healthy n delicious. For eg. the recipe for green beans is : 2 cups of chopped green beans, 1 Cup chopped carrots, 1/2 cup chopped potatoes. 1 cup chopped onions is optional. Heat oil (I use mustard oil) add cumin seds let it splutter. Add hing 1/8tsp. Then add 1tsp grated ginger. Add onions which is optional. Saute. Add potatoes, salt and turmeric. cover and cook for 10 mins. Add green beans n carrots. You can add green peas too. Add 2 cups of chopped tomatoes. I love them so add 2 cups. You can reduce or increase the amount of tomatoes. let it all cook till the tomato is semi-pulpy.You can cook till its mushy or till its a lil crisp. Garnish with cilantro leaves.

Love cooking healthy Indian food in a traditional and authentic way.

Its very tasty depending on what part of India its from and who cooks it.
