Check the fine dining restaurant in the major hotels, most will have something even some of the burger joints in town sell buffalo, elk, venison and antelope burgers.
Vegas has everything. I'm sure there is somewhere.
P.S. Deer and Elk aren't really excotic, they are just "wild game".
