Depends there are a few different types of Vegetarians. Vegans who eat only vegetables, and Ovo Lacto Vegetarians who eat Eggs and Milk products. Mainly a true vegetarian or vegan will eat only vegetables. Sometimes these Vegans have to eat tuna fish or protein supplements if they become pregnant. People can live on vegetables alone, but people are omnivores and really designed to have more choices.
'vegetarian' is a name often applied to those who decline to eat *some* animal products but will take others (some will swear off meat but will eat fish, or some won't eat any animal but has no problem using products that come from animals like dairy).
'vegan' means no animal products whatsoever - no meat, fish, dairy, etc.
Now a 'cuisine' of the above is a way of practicing that - hopefully intaking protein & essential amino acids from other food sources for their own health & well being.
