Chinese food tends to have a high oil and salt content so you will want a wine with enough acid to offset it. I'd go with a dry white. If you have money go for a nice white Burgundy. A nice Champagne would work too.
A good dry California chardonnay or Fume Blanc could be quite nice. You could also go for a light red wine, such as a Chianti.
I'd also enjoy a dry vermouth on the rocks.

One might have several bottles of wine - wine for seafoods and reds for the meat courses with heavy sauces. Now - the old Chinese traditionally toast with Mao tai before the meal begins. In the USA - some use whiskey instead. Younger people prefer the wines.
