Recipes from Bialystok, Poland please!!!?!

Its in the north of Poland, in the Podlaski (Podlasie) region. Here are some dishes:

korycinski cheese -
babka ziemniaczana -
cebulniaczki -
chleb biebrzański -
kartacze - big long-shaped potato dumplings stuffed with meat and marjoram
kiszka ziemniaczana - potato sausage
okoń sma?ony, w zalewie octowej - perch fried in vinegar
s?kacz - pyramid cake, made of many layers.
zucielki -
szpekucha - small dumplings stuffed with lard and fried onion

the only polish food I know is really good is beetroot soup, perogi is good, and look up on google for recipie, though I cheat and get it from the supemarket :)
