What is an easy and yummy ethnic dish to make?!

Question: What is an easy and yummy ethnic dish to make?
I'm a college student with access to a grocery store. I like cooking so thats not a problem. What's something easy to make that doesnt have beef in it? Pork, chicken, ground turkey, crab, shrimp, fish is all fine.
I usually like Indian, Thai, Mexican, Cuban, Filipino, Ethiopian, and Moroccan foods. So maybe something along these lines. (although trying something new would be nice too) I also love anything really spicy!!

Answers:

Indian - you can try buttered chicken with steamed rice - Chicken tikka with roti bread and yogurt
Thai - Pad thai is the best with shrimp and chicken
Mexican - You can get 3 soft tacos with chicken, corn, sour cream, tomatoes and cheese
Filipino/indonesian - Mi goreng noodles with spicy sauce is amazing
Middle eastern - chicken kabab with rice and tomato sauce - Chicken shawarma with pita bread and tahine sauce is great !!

A Mediterranean hummus is the easiest thing ever to make, and you can make it as spicy as you like, save it in the fridge and eat it with chips, or spread it on sandwiches.

I don't know if you've ever made couscous, but it cooks in less than five minutes. You can use the Moroccan-style or the Israeli-style couscous for this dish.
