SSo for about 8 days if i just ate veggies and salad and just a little fruit and special k for breakfast and possibly a little chicken for dinner would i drop like 3 pounds?

more than likely you would lose. the general rule of thumb is 1-1/2 lbs of weight loss per week on an unsupervised diet. unsupervised meaning not monitored by a Dr. Your best bet is to try to follow the food pyramid. Eating healthy is the way to go, don't think diet that is to temporary, lifestyle changes will stop the yoyo of weight gain.

yes, sounds healthy. just make sure the chicken has no skin and is not fried. and put olive oil and vinegar on the salad that has a lot less calories then bottled dressing. eat a light lunch too so you won't be starving by dinner.
Yes you would but as soon as you start eating normal again you will gain it right bake you need to eat a bunch of little meals through out the day.

You will definetley lose that weight. But I would consider doing some strength training and some cardio each day to maximize your results.
