Question:

What are some good picnic foods?

I don't really want to have any meat items, like fried chicken or whatever. I love cooking, so any items you pick can be challenging to make. Also, no items can have strawberries. Thank you!

Easy Deviled Eggs
Makes: 2 doz. deviled eggs or 24 servings, 1 deviled egg each

12 hard-cooked eggs
1/4 cup MIRACLE WHIP Dressing
1/4 cup GREY POUPON Dijon Mustard
1/4 tsp. paprika



PEEL eggs; cut in half lengthwise. Remove yolks; place in small bowl. Mash with fork.
ADD dressing and mustard; mix well. Spoon evenly into egg whites; sprinkle evenly with paprika.
SERVE immediately. Or, cover and refrigerate until ready to serve.

Barbeque Bean Salad

1 pound dry pinto beans
1 can (15-1/4 ounces) whole kernel corn, drained
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
1 medium onion, chopped
2 cups tortilla chips, coarsely crushed, divided

Dressing:
1/4 cup cider vinegar
1/4 cup vegetable oil
1/4 cup ketchup
1/4 cup packed brown sugar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
3/4 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon hot pepper sauce

Place beans in a Dutch oven or soup kettle; add water to cover by 2 inches. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and discard liquid.

Add water to cover beans by 2 inches. Bring to a boil. Reduce heat; cover and simmer 1 to 1 to 1 1/2 hours or until tender. Rinse, drain and set aside.

For dressing, in a saucepan, combine the vinegar, oil, ketchup, brown sugar and mustard, Worcestershire sauce, chili powder, cumin, salt, pepper and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Cool slightly.

In a large salad bowl, combine the beans, corn, peppers and onion.

Just before serving, stir in dressing and half of the chips.

Sprinkle with remaining chips.

Yield: 14-16 servings

Italian Pasta Salad

2 pounds cooked and cooled pasta
1 jar drained artichoke hearts
1 can green olives
1 jar drained giardiena salad (in the pickle aisle and spelled correctly on the jar)
4 shredded carrots
4 chopped celeries
one bottle Newmans Own Italian Dressing
1/2 cup breadcrumbs


Mix all of the above together.

watermelon, raisin, cerely and carrot sticks, potato chips, macorini salad, grapes, wine, cream cheese and peanut butter.

Greek Pasta Salad

1 pound rotini noodles
1 pound boneless chicken breast
1 bay leaf
3 stalks celery, chopped
1 can sliced black olives
1 sweet red pepper, chopped
4 ounces feta cheese, drain and crumble
3 green onion, fine sliced
1 bottle Italian salad dressing

Cook noodles.

Cook chicken breasts in water to cover with 1 bay leaf for 30 minutes or until juices run clear. Remove bay leaf. Cool chicken and remove skin. Cut chicken bite size.

Combine all and serve warm or cold.

Serves 16.

Serve with pita bread and a tray with fresh fruit vegetables and cheeses

Vegetable Tamale Pie
VEGETABLE FILLING:
14 oz Beans, cooked pinto; drained
1 c Onion, white; chopped
1/2 c Pepper, green bell; cubed
2 Pepper, jalepeno; seeded and chopped
2 c Tomatoes, chopped canned, drained
1/2 c Pepper, red bell; cubed
6 oz Cheese, sharp cheddar, grated
8 Olives, ripe; sliced
3/4 ts Garlic
3/4 ts Cumin, ground
3/4 ts Chile powder
TAMALE TOPPING:
1/2 c Flour, all purpose
1 tb Flour, all purpose; (add to above)
1 1/2 ts Baking powder
3 3/4 oz Cornmeal, yellow
1/2 ts Baking soda
1/8 ts Salt
1 lg Egg; @ room temp
1/2 c Yogurt, plain
2 ts Margarine; melted & cooled
1 tb Chives; cut to garnish, opt.

Preheat oven to 375F.


2. Spray an 8"x8" pan with non-stick cooking spray. Into prepared baking pan, place all filling ingredients. Toss until well mixed; set aside. To prepare tamale topping, in medium bowl, place flour, cornmeal, baking powder, baking soda, and salt; stir until evenly mixed. In a small bowl, beat yogurt, egg and margarine. Add to dry ingredients and stir just until dry ingredients are moistened. Spoon mixture evenly on top of vegetable filling. If desired, sprinkle evenly with chives. Bake 35-40 minutes, until filling is hot and bubbly, topping is lightly browned and a toothpick inserted in center of topping comes clean.

Any salads that don't require mayo. Mayo doesn't hold up to being outside too long. So there are tons of things on the food network website that you can make. I was gonna say friend chicken, but you said no. Any fruits and veggies are always good. Trail mixes and stuff like that are great and good for you.

Pasta Salad:

Tri colored Rotelle boiled, drained
1/2 bottle Viva Italian robusto dressing
1/2 cup chopped black olives
1/2 green and 1/2 red pepper chopped
1/2 cup pignoli nuts.

Mix all, chill 6 hours. Add more dressing if needed.

Blueberry Pie, buy a nice one from a bakery or make your own. Blueberry pies and picnics are great together.

Check out recipes for Rachel Ray's 30 minute meals. She did a show on camping/picnic food. Stuff with no mayo that didn't need to be refrigerated. I think there was a trail mix and an awesome sounding portabello hoagie.

Seven-Fruit Salad - just skip or substitute the strawberries

? 1/2 cup lime juice
? 1 pint blueberries
? 1/2 cup water
? 1 pint fresh strawberries, sliced
? 1/2 cup sugar
? 1 1/2 cups watermelon balls
? 2 medium nectarines, thinly sliced
? 1 cup green grapes
? 1 large banana, thinly sliced
? 1 kiwifruit, peeled and chopped

In a bowl, combine the lime juice, water and sugar; stir until sugar is dissolved. Add nectarines and banana; toss to coat. In a 2-1/2 qt. glass bowl, combine the remaining fruits. Add nectarine mixture; stir gently. Cover and refrigerate for 1 hour.

You can do potato salad maybe add ur own twist to it. Vegi Platter, Wontons , Indian Smosas, Grilled fruit skewers with a honey yougert sauce.

some really good salads and sandwiches are great! add things to the sandwiches if you want to make them special such as avacados, cheeses, different turkey meats, sprouts, tomatos, bacon, tuna, or egg salad.
