There is no such thing as traditional Spanish food. There are many regions each with their own identities.
Breakfast you can have Churos (choo-ros) which you have with a thick hot chocolate drink. They are like long doughnuts.
You cannot go wrong with Tapas. These are small dishes include things like patatas bravas which are spicy potatoes in a tomato sauce, pescado blanco fritas - which are small deep fried fish usually dipped in a lemon mayonaise, Gambas which are like giant prawns which are served cooked in a garlic butter, pork meatballs cooked in a sherry sauce and a host of others.
You have to have Paella, which is a rice dish with shellfish, saffron and all things nice.
There is a dish made with blood sausage and broadbeans which is divine.
You will also find a lot of salt cod. One Spanish dish is salt cod made into balls and deep fried. They are very nice.
For dessert Creme Catalan. Its like a creme brulee.
You really need to go to restaurants full of locals rather than ones on the tourist trail. If you do not understand the menu and if you are brave enough take the waiter round the restaurant and point to things you like the look of. You may get some funny looks but my dad did that once and got some great food.
There is excellent raw ingredients in Spain which translates into some excellent food. There are so many regional differences you can never have enough.
That is difficult because I don't know where you are going and each region is different in Spain. The recipes are cooked so simply but at the same so beautifully. Spanish people tend to not hide the real flavour of things and believe in fresh ingredients and cooking with olive oil.
