AUSTRALIAN MEAT PIES

1 lb. ground beef
1 med. onion
1 med. clove garlic, minced
1/4 tsp. pepper
1/8 tsp. ground nutmeg
1 tbsp. Worcestershire sauce
1 (14 1/2 oz.) can clear beef broth
3 tbsp. all-purpose flour
Pastry for 2 crust 9" pie

In 10" skillet over medium heat, cook beef with onion and garlic until brown, stirring to separate meat. Spoon off fat. Add pepper, nutmeg, Worcestershire sauce and 1 cup of broth. Heat to boiling. Reduce heat to low and simmer 10 minutes. In cup stir together flour and remaining broth until smooth. Gradually add to beef mixture, stirring constantly. Cook 5 minutes to thicken.
Cut pastry into 8 (4 1/2") rounds. Press into 3" muffin cups. Spoon 1/2 cup of the meat mixture into each cup and cover top with pastry. Bake at 350 degrees for 25 to 30 minutes.

Ingredients

2 pounds ground beef
1 cup ketchup
1 cup onion, chopped
1 teaspoon salt
1 cup milk
? cup bread crumbs
1 teaspoon oregano
? teaspoon pepper
2 Tablespoons Worcestershire sauce
2 cups cheddar cheese, shredded
2 prepared pie shells, 8-inch
Procedure

Preheat oven to 350°F.
Combine ground beef, ketchup, onion, salt, milk, breadcrumbs, oregano, and pepper in a bowl.
Mix well.
Divide mixture into 2 pie shells and bake for about 45 minutes.
While the pies are baking, mix together Worcestershire sauce and cheese in another bowl.
After about 45 minutes, remove pies from oven.
Spread Worcestershire sauce and cheese mixture on top of pie shells.
Bake for about 10 more minutes, or until cheese is melted.
Serves 6.

Ingredients:
1 ounce butter or margarine
2 small onion, finely chopped
2 pounds chopped sirloin
2 tablespoons plain flour
2 1/2 cups bouillon or stock
1 teaspoon dried thyme
2 tablespoons Worcestershire sauce
1/4 cup chopped parsley
Salt and pepper to taste
1 pinch nutmeg
1 egg, beaten


Directions:

Melt butter in saucepan. Add onions and fry over moderate heat until onions soften. Add beef and fry pressing down with fork until beef is browned. Drain, sprinkle flour over beef, stir an continue cooking for a further 2 minutes. Remove pan from heat.

Gradually add stock. Return pan to the heat and stir constantly until mixture boils and thickens. Add all remaining ingredients. Cover pan and simmer over a low heat for 30 minutes. Line pie tin with pastry. Prick the base several times with a fork. Using a knife trim off excess pastry. Spoon filling in.

Brush around edge with beaten egg. Top with pastry pressing edges together. Cut a hole in center of pie. Brush with remaining egg. Cook at 400 degrees for 25 minutes or until golden brown.

Australian Meat Pie
1 onion, chopped
500 g minced beef
1 cup water
2 beef bouillon cubes
1/4 cup ketchup
2 teaspoons Worcestershire sauce
pepper
1/2 teaspoon oregano
1 pinch nutmeg
3 tablespoons plain flour
2 puff pastry sheets

Pre-heat oven at 220'C degrees.
Brown meat and onion.
Add 3/4 of the water, stock cubes, sauces and seasonings.
Boil and cover for 15 minutes.
Blend flour with the rest of the water till it becomes a smooth paste and add to the meat mix.
Let cool.
Grease a pie dish and line with pastry.
Add the mixture and put the pastry top on, milking or egging the edges and then pressing down with a fork.
Trim edges and glaze with milk or an egg.
Bake in a very hot oven (220'C) for 15 mins and then at 180'C for 25 mins, or until golden brown.

The Great Australian Meat Pie
1 tablespoon olive oil
1 onion, chopped
1 garlic clove, minced
650 g minced steak
1 cup beef stock
1/4 cup worcestershire sauce
1/4 cup tomato sauce (ketchup)
425 g tomato puree
1/4 cup frozen peas (optional)
2 tablespoons cornflour
2 tablespoons water
2 sheets frozen shortcrust pastry, thawed
2 sheets frozen puff pastry, thawed
1 egg, lightly beaten

Heat oil in pan, add onion and garlic stirring until soft.
Add meat and cook until browned.
Add stock, sauces and puree. Bring to boil and simmer for 20 minutes.
Stir through peas and conflour blended with water, bring to the boil and boil for 2 minutes until thickened.
Cut 8 12cm circles from shortcrust pastry. Line 8 greased pie tins with pastry, lightly prick with a fork. Cover with non-stick baking paper and fill with rice to blind bake in 200 degrees celcius oven for 8 minutes. (Place pie tins on baking sheets).
Remove paper and rice and bake a further 6 minutes. Cool.
Divide filling mixture amongst shells and then cut out 8 10cm rounds from the puff pastry.
Brush edges of pies with egg and press pastry lids on top. Cut two slits on top to allow steam to escape. Brush tops with egg.
Cook in 190 degrees celcius oven for a further 20 minutes.
