I live in New York City and it seems most of the restaurant staffs no matter what kind of food they serve is predominantly Mexican or from Central America. Working in the kitchen can be difficult and these people are willing to do the work and do an excellent job. Some have and more are moving higher up in the business and some have become chefs. I see this less though in Asian type restaraunts like chinese and Japanese. Look at Anthony Bourdain from No Reservations, he worked at a French Bistro and was replaced by a Mexican guy who is supposed to be very good at what he does.

some people are best at cooking foods, or even doing activities, of or originating from their own culture. For example, and no offense to anyone, but have you ever tasted a white person's mexican food? Im sorry but mostly, it doesnt taste very good. My best guess is that different taste buds for different people from different ethnicities are, well...different:)

Hope this helps:)

Truth is that all the pizza places and Italian resturants that I have seen the cook staff at, near Chicago where I lived about 95 percent of my life, are staffed by Hispanic great cooks taught by following
franchise recipes.

since its part of their culture they know more about it usually since they grew up in that culture and also for the effect of the restaurant authenticity.

because they're usually family resteraunts + chinese people are most used to that cuisine so they know how to serve it and cook it the best

They know how to cook the food therefore know how to do the job. They also my speak the languges spoken.

To give the restaurant an ethnic look as well as give the food an ethnic flavor and taste.

because it makes it seem more authentic, and more often than not they are family run businesses.
