Question: I need to know a traditional central Cameroonian dish?
Iwould like to prepare a Cameroonian dish, I have tried to look some up by they are divided by area. I need some good recipes from CENTRAL Cameroon. Please help, thank you in advance!

Cameroonian Appetizer
Blue-Coconut Jolofe Rice is a simple yet tasty dish. It is made using onion, peanut oil, tomatoes, tomato puree, coconut milk, carrots, long-grain rice and mushrooms. The seasonings for this appetizer include ginger, bay leaf, green pepper and hot pepper.

Ingredients
* 1 Onion, chopped
* 2 tablespoons peanut oil
* 4 tomatoes, peeled and chopped
* 1 teaspoon tomato puree
* 1 1/4 cup coconut milk
* 2 carrots, peeled and diced
* 1 small slice ginger, finely chopped
* 1 bayleaf
* 1 1/4 cup long-grain rice, washed
* 1/4 pound Mushrooms, sliced
* 1 small green pepper, seeded and chopped
* hot pepper, to taste
* salt, to taste

Directions

1. Fry the Onion in hot oil, in a large saucepan, for a few minutes.
2. Add the tomatoes and tomato puree. While stirring, fry over a moderate heat for 5 – 6 minutes.
3. Stir in 1/4 cup of the coconut milk and continue to cook until the mixture is reduced and thick.
4. Add the rest of the coconut milk, carrots, hot pepper, ginger, bay leaf and salt.
5. Bring to the boil, and add the rice and the remaining vegetables, stirring with a fork.
6. Reduce to a low heat, cover and cook until the rice has absorbed most of the liquid. Remove the lid, cover with foil and replace the lid until the rice is done.

Cameroonian Soup Chicken in peanut-tomato sauce soup takes a bit longer to cook than usual, but the delicious taste of the soup is worth it. The ingredients for this soup include peanut oil, chicken, cut into bite-sized or serving-sized pieces, onions, garlic, tomato sauce, peanut butter and cayenne pepper, black pepper, salt for seasoning.

Ingredients
* peanut oil
* 1 Chicken, cut into bite-sized or serving-sized pieces
* 2 onions, cut up
* 1 garlic clove, minced
* 1 cup tomato sauce
* 1 cup Peanut butter
* 3 cups water
* cayenne pepper, black pepper, salt

Directions

1. In a deep pot, heat a couple spoonfuls of oil.
2. Add the pieces of Chicken and fry it on both sides until it is nearly done. Remove the Chicken and set aside.
3. Fry the onions and garlic in the same pot. Add the tomato sauce, reduce heat and simmer for a few minutes
4. Return the Chicken to pot. Add the Peanut butter and stir in enough water (add if necessary) to make a smooth sauce.
5. Add spices to taste.
6. Simmer on low heat until Chicken is done.
7. Serve with boiled rice or platains

Sweet Potato Greens with Fish
Ingredients
* cup cooking oil
* 3 pounds sweet potato greens
* onion, chopped
* hot chile pepper, cleaned and chopped
* piece of dried fish (such as cod or herring), soaked in water and washed
* tablespoon tomato paste
* ? teaspoon baking soda
* ? cup of dried shrimp or dried prawns
* salt and black pepper to taste

Directions

1. Heat the oil in a large pot.
2. Add the greens, onion, pepper, dried fish, tomato paste and baking soda.
3. Cook for 15 minutes, stirring often.
4. Adjust seasoning to taste.
