Ethnic foods can be related to one another through cultural exchange. E.g., Italian pasta likely originated in China (for example, lo mein) but was brought back to Italy when merchants visited Asia looking for spices and goods to trade. Ethnic food is important b/c it plays a significant role in identity.
Ethnic food isn't important as such, no one would die if they never had a particular dish again.
It does make people feel at home and a good variety of food makes people happy.
Ethnice foods are related to each other in many ways, they may be from similar regions or they may be taken to other countries (for example curry in the UK is different to curry in India even though it is universally described as Indian food) by visitors immigrants etc.
Ethnic food can be a way of breaking ice between people of different cultures. It also shows how similar many cultures are, for example Greeks and turks or the middle east.
