Does anyone have a good recipe for lean chicken breast?

I bought these chicken breasts. Don know what to prepare that is lowfat and delicious. Help

Chicken With Summer Squash and Lemon-Chive Sauce
2 teaspoons vegetable oil

4 chicken breast halves (4 ounces each), boneless, skinless

1/4 teaspoon each salt and pepper

2 cups ( 1/2-inch) cubed yellow squash

1 1/2 cups ( 1/2-inch) cubed zucchini

1 cup fat-free, low-sodium chicken broth

1 tablespoon chopped fresh chives

1/2 teaspoon grated lemon rind

1 tablespoon fresh lemon juice

2 teaspoons cornstarch

2 teaspoons honey mustard

In a large nonstick skillet, heat the oil over medium-high heat. Sprinkle both sides of the chicken breast halves with salt and pepper. Cook chicken 4 minutes on each side; remove from the skillet and keep warm.

Reduce the heat to medium. Add the squash and zucchini to the skillet and cook 2 minutes, stirring frequently. Return the chicken to the pan.

In a small bowl whisk together the chicken broth, chives, lemon rind, lemon juice, cornstarch and honey mustard. Pour over the chicken and vegetables. Cover, reduce the heat to medium-low and cook 3 minutes. Makes 4 servings.


Per serving: 181 calories (20 percent from fat), 4 g fat (1 g saturated), 7 g carbohydrate, 28 g protein, 295 mg sodium, 66 mg cholesterol, 38 mg calcium, 2 g fiber.

I have a great recipe!

1. Make a flour and rosemary mix to bread the chicken in. Cover both sides of chicken, then fry them in oil.
2. Make a delicious cream sauce with capers, onions, and olives. Drizzle on top of chicken.
3. Serve with baby carrots, and other delicious veggies!

Makes a wonderful meal, and you will have to find a recipe for the cream sauce. Enjoy! =]

CHICKEN SANDWICH

ingredients:
chicken breasts
buns for as many sandwiches your going to make
tomatoes
lettuce
onions
mayonnaise to taste
cheese


then you make it into a sandwich

I sprinlke with lemon pepper and grill - its so simple
and good.

You could cut them into small cubes and stir fry them with some vegetables.

Roll them in egg and breadcrumbs and shallow fry for crumbed chicken.

Cut into cubes, marinade for an hour and put on skewers with pineapple, onion, capsicum etc.

Char-grill on a BBQ plate. Can also be done in alfoil.

Cut into cubes along with some vegies, cook and add a sauce or flavouring.

Poke them with a fork all over, and soak in Italian Dressing for about 45 minutes and bake in the oven at 350 until the inside s no longer pink, also make sure the inside reaches 160 degrees F before you take it out. I usually serve mine with chef salad, and corn on the cob.
