My region, northern California, is known for it's use of fresh, healthy ingredients. Our best known dishes are boiled dungeness crabs, baked goat cheese, lots salads with great vegetables and of course our great wineries. When I was a kid the largest winery in the world was a couple of blocks from our house and there are still many small fine vineyards in the hills near my house.



Born in southern italy (bari) ... we eat alot of pasta made with semolina (orecchiette, cavatelli), seafood (mussels, sea urchin, octopus, calamari), cime di rapa and bietola (bitter greens), mushrooms (cardoncelli), pecorino cheese and lamb meat

The most famous dishes from my area is Orecchiette con cime di rapa (orecchiette, rapa, hot pepper, olive oil, anchovy and pecorino cheese), cavatelli con cardoncelli (cavatelli, onion, mushrooms, olive oil and pecorino) and Zampino (thin lamb meat sausages)

I move to Montreal, Canada at 17 ... and here we're known for international because there are many different cultures. So there is alot of french, italian, spanish and asian cuisines and restaurants that combine elements from different cuisines. But, here, in the outer regions, there is alot of farm/market food (cows, sheep and fresh vegetables)

The most famous local dish here ... is poutine. French fries (fried potatoes) gravy (thick brown meat sauce) and cheese curds (pieces of little cheese) ... i think it's disgusting, i never liked it, but many, many people eat it here. It's very popular



In the southern United States some of the foods we are known for:
BBQ ribs
Okra
Various fruit cobblers
Chili
Grits
Ham with red-eye gravy
