why is restaurant fried rice cooked without eggs?!

May be that time the seafood stores used to offer FREE eggs with the shrimps anyone purchased!
Jokes apart...they are simply cutting the cost....
Usually Asian way of putting eggs in fried rice is to make a scramble on on very hot wok and mix it with the rice....so the Eggs actually don't work as a binder of seasoning to the rice grains...it's the butter or other fat....and if any sauce is used....that acts as a binder.
In general, eggs are used in cooking as a - binding - agent. Rice on its own is bland. In fried rice, eggs are one of the main ingredients that would be used to incorporate and stick the seasonings/ingredients onto the rice. So, if the restaurant that you patronize omits the egg, then, I would suggest you go to a different one to eat your fried rice. Or cook your own. :)
don't think i have seen many restaurants ignoring eggs in fried rice near me
the few that do are likely just cutting cost, or want to increase the lifespan of the rice.
Sorry, I haven't observed what you are describing. All the fried rice I see still includes egg. Are you perhaps describing Panda Express or similar American Chinese take-out places?
Maybe since society has become more afraid of the sicknesses associated with uncooked eggs..?
I don't know, but this Japanese steakhouse near my house does that still. I though that was normal, but I guess it's not done much anymore.
