Dinnertime Help!!!?

I am making dinner tonight and am stummped on what to make.
I have,
chicken, pasta, red Sauce, Scallops, Ground Beef

Can someone give me a recipe to do with 1 of these "proteins". It needs to be able to go with broccoli too. THANKS!!!!!

maybe chicken parmesan....that sounds kinda good with broccoloi sauteed with garlic and pasta as a side instead of with sauce on it

Three Cheese Baked Pasta

serves 12

INGREDIENTS

1 pound uncooked pasta
1 pound ground beef
1 onion, chopped
6 1/2 cups tomato pasta sauce
6 ounces provolone cheese, thinly sliced
1 1/2 cups sour cream
6 ounces mozzarella cheese, shredded
1/2 cup grated Parmesan cheese

DIRECTIONS

Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain.

Meanwhile, cook ground meat and onion in a skillet over medium heat, stirring frequently, until meat is browned. Stir in pasta sauce, reduce heat, and simmer for 15 minutes.

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. Layer the ingredients in the prepared baking dish as follows: half of the cooked pasta, all the provolone cheese, all the sour cream, half of the sauce mixture, remaining pasta, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese.

Bake in preheated oven for 30 minutes, or until bubbly.


this is so yummy and would go with any veggie.

Why not make an orange sauce?

You'll need some heavy cream if you don't have it (and some parmesean):

- Mince garlic and sweat in a tablespoon of olive oil
- Add chicken to the pan, browning over a medium heat
- Remove chicken and set aside to rest, add red sauce to pan
- Once sauce is heated, stir in one half pint of heavy cream
- Add a generous amount of parmesean cheese to the sauce
- Chop chicken and add it back to the pan
- Simmer entire dish to incorporate all the flavors.
- Check sauce for taste, consider adding more basil, oregano, black pepper, or cream depending on preferred taste.
- Toss with pasta and serve with a side of broccoli.

How about chicken sauteed in EVOO ( yes I said it )
and garlic steam the broccoli and add about a teaspoon to start of Italian season to your chicken. When pasta finishes drain and pour some more olive oil over top add your broccoli and serve over your pasta
If you have a small onion add some diced to your garlic chicken mixture

Salt and pepper the scallops
Slice a lemon in half
Heat a saute pan on med high
Add tsp olive oil and pat of butter (1/2 inch cut)
Add scallops and sear 2 mins/side
Remove scallops
Add another 2 pats of butter to pan turning up heat
Deglaze pan with squeeze of lemon whisking bits from bottom
Add 1/3 cup dry white wine and reduce 1/3 (simmer for 3-5 mins on med high)
Turn off flame
Return scallops to pan to coat and bring to temp

Serve with your accompaniments.

Chicken & vegetable stir fry.

Spaghetti Bolognaise with vegies mixed through.

Scallops:

Fry them in oil, garlic, salt, pepper, and serve. Add a little lemon juice for the finishing touch!

Chicken, Pasta, and Red sauce:

Cook the chicken [cut up into small pieces] and mix it with the red sauce, and noodles. Add oregano, rosemary, and thyme to the red sauce. It will be a simple, yet delicious meal.

Ground Beef, Pasta, and Red Sauce:

Fry up the beef, and chop up. Add salt, pepper, onions, and garlic to the beef.
Get out the red sauce and add garlic [you can never have too much garlic!], oregano, and rosemary [salt, pepper].
Mix all of it together into a delicious pasta dinner.

FETTUCINE ALFREDO

(4 servings)


8 oz. medium egg noodles


1 cup Parmesan cheese

1/2 cup heavy cream

pepper to taste

1/2 cup butter


Grate cheese. Cut butter into quarters. Cook noodles. While noodles are standing, in glass serving bowl, combine cheese, butter and cream. Cook at MEDIUM 3 - 4 minutes or until butter melts. Stir twice. Stir in drained noodles, toss well. Season with pepper.

Chicken Stir Fry
1/3 cup sliced celery
1/3 cup sliced onion
1/3 cup sliced bell pepper
1/3 cup sliced pea pods
1/3 cup bean sprouts
1/2 cup cubed tofu
1/4 cup chopped cilantro
1/3 cup sliced cabbage
1 cubed chicken breast
1/4 cup chopped scallions
3 cloves garlic

Start by getting all of the ingredients laid out and ready to go. Don't use as much veggies as I show in the picture here. I got carried away a bit. You'd never be able to eat all that. Other items I sometimes add are broccoli, sweet red peppers, or carrots. Be sure to have the sauce ingredients mixed and ready. Also cook some rice to serve this over. Or serve it over noodles, that's good. Or whatever. Just don't serve it over potato salad. That's very bad.
In a separate pan saute the chicken in 1/4 tsp sesame oil. Half way though, press in the garlic. If you are using mushrooms, add them a few minutes before the chicken is done. Mushrooms won't stir fry well. Take off the heat and set aside.
Separate the veggies. Put everything but the tofu, bean sprouts, and scallions in a bowl and have at hand. Use a clean steel (not non-stick) pan to stir fry the veggies. Add 1/4 tsp olive oil, and put it on high heat until the oil starts smoking a little. Toss the veggies in the bowl into the pan and stir quickly for less than a minute. About 30 seconds for the amount I use here. Push everything to the side of the pan and turn off the heat.
Pure in the sauce and stir quickly until it thickens. Mix the veggies in and then add the cooked chicken, tofu, scallions, and bean sprouts. Mix everything together and serve over rice. One critical garnish is the crispy Chinese noodles which I forgot to buy for this meal. Don't forget those. Hee hee.

Southwestern-Style Meat Loaf
1 pound ground beef, lean
3/4 to 1 pound ground veal
1 egg
1/2 cup fine dry bread crumbs
1 can (approx. 4 1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped mild green chile pepper
1 cup corn kernels
1/2 cup salsa, plus more for topping
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/8 teaspoon pepper
1/4 teaspoon salt, or to taste
PREPARATION:
Combine all ingredients except topping in a bowl and combine until blended. A wire potato masher works well for mixing meatloaf. Pack into a loaf pan and bake at 350° for about 1 hour and 15 minutes.
Serves 8.

~~~Scallops and Spinach over Pasta~~~
INGREDIENTS
12 ounces spaghetti
3 pounds bay scallops, raw
1 (10 ounce) package frozen chopped spinach, thawed
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1/4 cup water
garlic powder to taste
salt and pepper to taste
1/4 cup grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a medium skillet, saute spinach in olive oil until heated through. Add lemon juice, garlic powder and water.
Add scallops and cook for 3 minutes or until done. Be careful not to overcook. Season with salt and pepper to taste.
Place strained spaghetti in dish and place the scallops and sauce on top. Serve with grated Parmesan cheese.

get these supplies together im going to teach you how to make chicken and broccoli and brown rice

8 tablespoons olive oil
2 tablespoons + 1 teaspoon chopped garlic
2 tablespoons + 1 teaspoon chopped shallot
1 cup uncooked brown rice
1 cup chicken stock
1 cup water
salt
blackpepper
1 bunch broccoli
4 6-ounce bonless, skinless chicken breast halves
2 tablespoons unsalted butter

step 1. in a saute pan heat 3 tablespoons of olive oil over medium heat. add 1 teaspoon each of the garlic and shallot; cook for 1 min. Add rice, saute for 2 minutes Stir in chicken stock, water, and a pinch each of the salt and pepper. Bring to a simme; reduce heat. cover and simmer for 25 minutes or until rice is tender. Set aside and keep warm

step 2. Meanwhile, in a large pot bring 3 quarts of water to a boil. Add broccoli abd boil for 5-7 minutes. Remove from pot and place in a bowl or a sink of ice water. drain well and cut into florets; set aside

step 3. In a grill pan heat 3 tablespoons of olive oil over medium heat. Season chicken with salt and pepper. Cook chicken in hot oil for 4 minutes per side or until golden brown. Set aside and keep warm.

step 4. In a frying pan heat the remaining 2 tablespoons oil and the butter over medium heat. Add the remaining 2 tablespoons garlic and 2 tablespoons shallot; mix well. Add broccoli florets; saute for 2 minutes. Season with a pinch each of salt and pepper.

To serve, place chicken breast on a serving platter. Add broccoli and brown rice to platter
