What are Irish treats?!

Question:

What are Irish treats?

I'm presenting Ireland in International Business course, and I'd like pass out some inexpensive sweet treats. Our group might bring in a bagpiper and some Guinness, but I want to add something. I'm not going to make corned beef and cabbage. Any suggestions?

Answers:
I have a recipe for a Creme De Menthe Also Shortbread (very very easy and good)

Crème de Menthe Cake

1 box white cake mix
Green food coloring
1 jar hot fudge sauce
Clear Crème de Menthe (CDM)
Cool whip

Make box according to directions, adding a few drops (not too dark) of green food coloring and a ? cup of CDM. Bake as directed. When cake is cool, place entire contents of fudge sauce over it. Refrigerate 1-2 hours. Top with green colored Cool whip (you can also add a 2 TBL. of CDM to the Cool Whip. Keep refrigerated until serving. Remember that alcohol will bake out of the cake but will be noticeable in the cool whip.

Shortbread

Cream ? pound of butter & ? cup sugar until fluffy. Add 2 ? cups sifted flour and ? tsp. salt. Blend well with hands. Separate into 2 sections and form 2 inch diameter rolls. Refrigerate overnight. Remove, let sit at room temp for awhile, cut into ? inch slices, prick with fork and bake on cookie sheet at 300 for 15-18 minutes. Store in airtight container.

Not to be overly corny, but how about adding green food dye to some rice crispies treats? May not be authentic in taste, but the point will go across. :P
