Dried beans?!

Dried beans?

Okay I have tons of dried beans (all different kinds) lots of rice, lentils, split peas, and noodles. What can I do with all this? Do you know of any good crockpot recipes using some or all of the ingredients?

Janetta's 15-Bean Soup

INGREDIENTS:
1 lb 15 bean soup mix
1 tbs vegetable oil
1 large red onion, chopped
3 large cloves garlic, minced
2 bunches chopped green onions
1 tsp dried basil or 1 tbs fresh basil
1 tsp dried oregano or 1 tbs fresh oregano
1 tsp dried thyme or 1 tbs fresh thyme
1/2 tsp white pepper
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/4 to 1/2 tsp red pepper flakes
zest of 1 lemon or lime
1 tbs rice wine vinegar or balsamic vinegar
2 qts vegetable stock or 2 qts water with 2 tbs vegetable stock base
PREPARATION:
Prepare beans according to package directions by soaking in water overnight or simmering them in water for an hour, draining the water and reserving the beans in a colander. Saute onions in oil for 5 to 8 minutes over medium heat til they are soft.

Add minced garlic, scallions and all of the herbs and spices, including the zest, stir and heat through for about 2 minutes. Add vinegar and stir, then add beans, stock or water and base or plain water, cover pot and bring to a boil. Lower heat to simmer. Cover pot again and allow to simmer for 11/2 hours. . Check for level of liquid occasionally. Add additional stock or water if soup appears too thick for your taste. Check beans for tenderness. If not soft, cook at simmer for another 1/2 hour.

I always soak them in water for a day if possible, dry beans are good with fried onion and garlic and a bit of turmeric. also can make like a thick soup with beans and rise although its more like a winter food.

Make soup. Soak the dried beans in a bowl of water over night, or about 8 hours. Discard soaking water. Don't soak the lentils or split peas. Put them all in the crock pot with water and slow cook several hours. Add more water if it becomes too dry. Add salt, pepper, cayenne, etc., to taste. Canned broth can also be used in place of water to add more flavor.

THEY SAY DRIED BEANS IS GOOD FOR COOKING TO GET IRON BUT DON'T EAT IT AFTER 7PM YOU WILL GET GAS.

BEAN SOUP

1 pound assorted beans
2 bay leaves
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
3 stalks celery, stringed and sliced thinly
1/2 lb baby carrots
1 onion, chopped
4 cloves garlic, minced
1 lb Italian sausage
1 tablespoon olive oil
2 cans chicken stock
1 can diced or stewed tomatoes
1/4 teaspoon crushed red pepper
salt and pepper, to taste
1 chicken bouillon cube
water to cover ingredients

Slice casings of sausage meat and crumble into a skillet. Add olive oil and saute over medium high heat until outside of sausage begins to brown. Add onion and saute until translucent. Add garlic near end. Sausage meat does not need to cook, only brown slightly. Do not allow garlic to brown.
Deglaze pan with chicken stock, and transfer contents of pan to Crock pot.

Add remaining ingredients except for tomatoes to Crock pot.

Set Crock pot to high setting and cook for 2 hours, then cook an additional 3-5 hours on low setting or until beans are tender.

Check occasionally to see if more liquid is required as beans expand during cooking. Add tomatoes during final hour of cooking.

Season with salt and pepper to taste.

Can be served over pasta or rice.

Note: When in season, fresh herbs may be substituted for dried for enhanced flavor.
