technically it is called "Al-Dente", which literally means firm to the tooth. It should be firm enough to hold, and give a pleasing feel to the teeth when chewed
i had this question on an exam paper at catering college last week, the answer was "pliable" meaning like a kind of putty
Soft enough not to be mushy but firm enough to be held between teeth and gently masticated.
