can i use shank meat for bihari kabab?!
I have shank beef but I dont want to make nihari. But I am not sure if ican make bihari kabab from this meat.

Shank is will get very tough in a short period of time. I would suggest using tenderloin if you can afford it bc it tends to get expensive or a top sirloin.
Shank is dog food, poor dog.
