Smother chicken again.?!
Ok. Not my place to begin with. First off chicken is breaded and fried. Second Its put out on steam table . After 4 hrs not sold.Put in a pan smothered with gravy 45 mins in oven at 350 for 45 mins then put back on line. At same time have skinless boneless chicken battered and fried but sitting on counter maybe 4-6 hrs waiting to be smothered in oven with gravy like the fried with no skin. When rdy to use same procedure as battered. I never tried it or intend to just asking opinions on what I see. Thankyou for responses. Btw I'm not a idiot or a cuisine master. Sorry.

It sounds pretty nasty to me, but if they keep doing it, it must sell. I would be concerned about whether that met your states food safety standards and how often they are checking temps to ensure that it doesn't become a bacteria free for all.
