Most cooks actually show what they mean by that. But yes pastry in a dish, put greaseproof paper in, put in dried beans (you can actually purchase wooden re-usable ones for this purpose) pop into oven for about 15 mins (I think) then take out remove paper and beans put in your filling and back into the oven.



Blind baking is when you partially or fully bake a pie/tart crust that is NOT filled.
You would normally do this for things that you want to ensure a crisp, not soggy crust (ex. Quiche), or for pies that have uncooked fillings that do not need to be baked (ex. Banana Cream Pie).

If you bake the crust without weighing it down, it often puffs up. To avoid this, you have to blind bake it by weighing it down with uncooked beans or specially made ceramic pie weights.

You don't need to use the weights if you are baking your pie with a filling in it because the filling will weigh down the crust.

When you cover a pie crust with foil and pie weights that has to be pre-baked. You can't see if it's done.
