Extremely easy, go to a Mexican grocery and look for "empanadas regias" these are fold over pastries covered in cinamon and sugar and filled with milk caramel (cajeta de leche) If you are feeling more adventurous , you can make the favorite Monterrey style tostada, "Tostada Siberia" , you will need to cook some chicken breast as if you wehere making chicken stew, once chicken is made, you wold pull the meat appart into strings, get some regular color tostadas, preferably the big size ones that are thick, top a tostada with shreded chicken, then add some guacamole, with no cilantro, on top, top off with mexican sour cream, and cover with another tostada.

Can you get your hands on a goat? If you have a Mexican market near you, you should be able to buy Glorias (candies) http://www.mexgrocer.com/7478.html
Taco Bell. The most delicious tacos on the face of the earth, hands down.
Corn chips. Why spend money on some lousy fair.
