Are my potatoes still okay to eat?
I peeled them about 5 days ago, put them in a pan of water, and refrigerated them, cause we decided on something else to eat. Today I put fresh water in them, and they are on the stove now, they seem perfectly fine, I just want to make sure, they were already getting old when I peeled them

Well by the looks of it you already ate them. In a restaurant we would have to throw them out the day after they were cut. This is really the best thing to do. Like one person stated, When in doubt, throw it out!!! Yes I know food prices are increasing but do what is best for your family. Usually potatoes would be good for 24 hrs as long as they do not have brown spots.
They're fine. You kept them in water so as to not rot or turn color.
If they were refrigerated, then they are fine. They could have made a little "slime" in the water due to the starch, so it was good you changed the water. Make sure you cut out the eyes, since you said they were getting old. Never leave a potato out overnight, wrapped in foil, etc.... It can develop botulism.
As long as they still felt firm and did not smell, you will be fine. Potatos last a long time in a cool dry place. It's when they start sprouting stuff that they are bad. But thats when they are whole.
They should be fine. If there is no odor or slime, there is little chance of a problem. Then boiling, will kill all vegetative bacterial cells.
If you are in doubt, toss them . Potatoes are not that expensive.
If they're still white and not slimy- you're good!
