Usually sushi is about fresh fish(real sushi), One thing to keep in mine is that busy restaurant are alway fresher fish cause the fish rotate faster than other restaurant. For buffet, raw fish won't be that good if it is sitting there for a while. Most upscale buffet put their raw fish in a bed of ice to keep the fish more fresh.
First of all, sushi is not Chinese. Sushi is Japanese and should always be eaten at its freshest because the product is often raw. The best sushi is from a reputable Japanese restaurant, but it can be pricey.
Lastly, anything from an average buffet is not usually the best of quality (unless it's a really fancy expensive buffet).

And more important : Sushi uses fish from the best quality, and you never get that in a buffet.
Ask your Dad if a steak from the BBQ tastes the same as one which has been cooked hours earlier and then put under low heat to keep it warm, prepared by chefs which have no cultural connection with cooking steak.
of course not. the chinese buffet sushi is usually not fresh because it has been sitting out for at least 10 minutes or longer. and since its a buffet they don't use the best material (food) and use load of msg.

Nothing from an all you can eat buffet is going to be anywhere near as good as an individual dish made to order in a restaurant.
