I've never heard of mai poi sauce before. But, I do know what ma po sauce is. It is a sauce used to make "ma po tofu" aka "mapo doufu/tofu". http://www.efooddepot.com/products/lee_k…
A lot of those sauces will produce mapo tofu that's sweeter and milder than the authentic Sichuan Chinese version.
This is a mapo tofu recipe that's fairly close to the authentic Sichuan version. http://www.epicurious.com/recipes/food/v… Authentic Sichuan mapo tofu used beef instead of pork and there's enough Sichuan peppercorn in the dish to numb your tongue and enough chili to cause burning sensations. Authentic Sichuan version isn't as friendly as those modified versions. But, once you got used to the taste, it could become addictive.
What i look up for mai poi sauce,it is a brand of Thai sweet chili sauce called Mai poi.
There are recipes on how to make your own,or you can buy it in a bottle.Here is a recipe that uses it in a bottle
Shrimp & Noodle Bowl Recipe
Shrimp & Noodles:
5 ea 16/20 cut shrimp
3 ea Chinese shitake quartets
10 ea snow peas (strings removed)
? cup basil sweet chili sauce
1 tablespoon Asian herb salad
1? cup fresh lo mein noodles
Scallions sliced on steep bias
Canola oil for cooking
Method of prep:
1. Sear shrimp in a small amount of oil, cook till pink and remove from the pan.
2. Cook the mushrooms in the same pan till softened (more oil may be needed).
3. Cook lo mein noodles in boiling water till tender.
4. Add basil, sweet chili sauce, peas, Asian herbs, and shrimp to hot pan and stir to combine.
5. Strain off noodles and add to pan. Toss all together to combine.
6. To plate, place shrimp around the perimeter of a plate. Mound the noodle mixture in the center of the plate and garnish with sliced scallions.
Asian Herb Salad:
1 tablespoon cilantro
1 tablespoon Thai basil
1 tablespoon mint
Cut coarsely and mix.
Basil Sweet Chili Sauce:
1 bottle Mai poi Thai sweet chili sauce
1 cup picked Thai basil leaves

Mai means "mother" in Hawaiian and poi is a Hawaiian fermented paste used in Hawaiian dishes.
So mai poi means "Mother Sauce"
