Hi: Here is one that I use all the time.

2 cups cooked white rice. To cook your own rice, heat two cups of water in a saucepan until it boils. Add 1 cup white rice and turn heat to low and cover. Cook for about 20 mins or until all the water is absorbed. Dump into a large bowl to cool - it doesn't have to be cold for fried rice, but should be cool.

2 extra large eggs, beaten
2 scallion (green onion) chopped - use the whole onion
1/2 cup frozen peas (can also add frozen carrot and / or corn if you like)

3 Tablespoons soy sauce - use the real chinese dark soy, not Kikkoman
1 teaspoon Sesame oil - the oriental dark kind, most supermarkets carry it
Vegetable oil to fry

Heat small non-stick frypan and cook beaten eggs until done...they should be like scrambled eggs. Set aside. In large frypan, add about 2 tablespoons of oil. Heat on med heat and then add rice. Stir and heat rice and then add soy sauce a bit at a time to taste (you may want more or less). Add the eggs, scallions and frozen veggies and heat through until all is nice and hot. Remove from heat and add sesame oil, this will give it that chinese restaurant flavor. Serve.

Note: You can also add minced pieces of cooked meats such as shrimp, chicken, pork or beef when you add the veggies for meat fried rice. Happy Cooking

easy, prepare rice in a steamer, once ready, heat some table spoons of sesame seed oil, add some sliced leeks and miniature shrimp and stir fry the steamed rice, just a minute or two until it starts to look "glossy"
