If you look at the whole wheat grain, you'll see it has a brown color to it. The same outer skin is retained while wholly grinding the grain, giving it the characteristic brown color.



When flour is made, the manufacturer either removes the husk or leaves it on. If they leave it on then the husk is ground up with the wheat and the bits of husk make the flour look brown. Without the husk, the flour is generally a lighter color. A lot of the time a company will bleach the flour to make it more white. You can purchase unbleached flour from any grocery store.



The fact that it is WHOLE wheat. They're using the whole part of the great instead of just the "flesh" or "meat" of the grain.
