Creoles and Cajuns are the two major ethnic groups in Louisiana. The Creoles have their ancestry based in the French and other Europeans who came to New Orleans (specifically the city) and their food (and seasoning) is not as spicy. The Cajuns ancestors came from Arcadia in Canada who settled in the backwoods and developed a more spicy, rustic cuisine and most of the cajun seasonings are spicy.



Creoles were French pioneers who came to Louisiana by way of the West Indies.
Cajuns are possibly French and French/Native Americans who came to Louisiana when they were chased out of Eastern Canada (Arcadia) by the English.
Different spices, similar ingredients. Not a good idea to call a Creole a Cajun.



Creole = Southern/Louisiana hot style

Cajun = Mexican spicy style



CREOLE /ELVIS SAID HE WAS THE KING



They both are not to my liking.
