What is the name of this Italian dish: eggs with red sauce and green peppers?!


Question: What is the name of this Italian dish: eggs with red sauce and green peppers?
My mom used to make this Italian dish with left over spaghetti sauce. She would saute some green peppers in olive oil until they were soft, scramble up a couple of eggs and then add a little bit of red sauce. You can eat it hot, cold, plain on a dish with a fork, or as a sandwich. I can make it I just don't know what to call it.

It doesn't have to have a name. Your mother made it because she a frugal person and had a family to feed. I'm sure it was delicious, since Mamma made it with love.
My own mother used to make pasta for a family of five with one 19 oz. can of Pork and Beans. Delitious to say the least.



My mum made the same but she claimed it was some kind of Spanish egg tortilla ( minus the potatoes).
I dont think it really exist. I invent sometimes names for food for my kids as well.. "Catalan mountain stew" sounds better than " Whatever I had in the fridge thrown together"



I have lived in Italy for 18 years and have never seen or heard of this recipe. Sounds like something your mom or her mom made up because those were the only ingredients they had on hand.

I think it is just a fried Green Pepper Dish.. My mom used to make peppers this way too, and I still love peppers prepared this way on a kaiser.
