Besides Indian, Italian is by far the safest cuisine.

The Chinese have no idea about vegetarianism and will use pork fat for cooking, chicken stock and so on – even in restaurants in the West. The French and Spanish are to be equally avoided: not because they don't understand vegetarianism but because they hold it in contempt!

I once found little bits of bacon in a vegetarian dish in Spain, added because the owner (a little old lady) felt sorry for me and wanted to build me up!

If you are searching for vegetarian cuisines, I's recommend that you look for religion related vegetarian cuisines first. Those dishes were part of some people's everyday life and many of those dishes have been eaten for centuries already. Religion, is one of the reasons why India got a very good vegetarian foods selection. Chinese also got a HUGE selection of vegetarian/vegan foods; many Chinese buddhist were eating vegan dishes long before the word vegan was even invented. You might or might not know that there are regional difference in Chinese cooking. The same applies to Chinese vegetarian dishes. Also, long before veggie burgers (originally called tofu burgers) were introduced, Chinese have already tried to reproduce vegetarian dishes that resembled meat dishes. Fusion Chinese dishes are also available too. Chinese vegetarian foods are... err.. hardcore.

Examples of Chinese vegan dishes:
1) http://farm5.static.flickr.com/4004/4267… This dish's main ingredient = mushrooms. It looked like General Tso's Chicken. The taste and the texture are close to General Tso's Chicken too. 100% vegan!

7) Vegan "beef" jerky - I'll not post pics because it will show the manufacturer's logo. My advise on those: DON'T TRY IT YET! It will have an awful taste that will linger inside your mouth even after repeated washes. Wait for version 2 to come out. LOL

I'll not post the obvious such as dumplings, buns, stir-fried noodles, noodle soups, fried rice.... :)

PS: I think Chinese vegetarian dishes are more impressive than Indian vegetarian dishes.

Japanese "shoujin ryori" (Buddhist temple food): simple sauteed local vegetables over brown rice, miso soup, fresh fruit, pickled vegetables, and fermented beans ("natto"). Clean and healthy with good fiber. I eat like this every day. Love it!

middle eastern....there's falafels, hummus, Baba ghanoush, grape leaves stuffed with rice, Mujadarra and many other dishes. Always ask for a vegetarian version because recipes vary.



Italian is pretty safe. Chinese could be made vegetarian, depending on how you make it.



Italian cuisine contains some lovely vegetarian choices.
